Executive Team

David Cox

David Cox joined ARCOP as President in 2005 after having served as Vice President of Procurement and Supply Management at Darden Restaurants. Prior to Darden, he held supply chain positions at Bruegger’s Bagels, RTM Restaurant Group, Restaurant Services, Inc. (Burger King), and UFPC (KFC). David is a board of trustees member of the Arby’s Foundation and serves on the National Council of Chain Restaurants’ Food Supply Chain committee. In addition, David is Chairman of the National Restaurant Association (NRA) Executive Study Group on Supply Chain Management. He holds a Bachelor of Science degree in Business Management and Administration from Bradley University, and received his MBA from Bellarmine University.

Keith Anderkin
Senior Vice President, Direct Procurement & Supply Management

Keith began serving the Arby’s brand through ARCOP in 2006. He manages the Procurement and Supply Management teams that source food, beverage and packaging products, as well as promotion management and forecasting. Keith belongs to the National Council of Chain Restaurants (NCCR) and is an active member of the NRA Study Group on Emerging Issues. Prior to joining Arby’s, Keith served in various supply chain roles for companies such as Fazoli’s and Long John Silver’s. Keith attended The University of Kentucky where he earned a Bachelor of Science degree in Accounting.

Les Karel
Senior Vice President, Indirect Sourcing

Les Karel originally joined the Arby’s team in 2006. In 2008, Les became a Wendy’s/Arby’s Group Vice President when the two companies merged. In 2010, Les was named President of a newly formed purchasing cooperative he helped develop for the Wendy’s and Arby’s brands named Strategic Sourcing Group, Co-op focused on indirect spend. In 2011, Arby’s was purchased by Roark Capital Group and the SSG Co-op was dissolved. At that time, Les joined ARCOP as a Senior Vice President. He currently leads the Indirect Sourcing and Distribution departments and serves on Arby’s Building Council. He is also an active committee member of the National Restaurant Association (NRA) Supply Chain Management Executive Study Group. Prior to 2006, he held various supply chain positions with Darden Restaurants, Edward Don, Boston Market and General Mills Restaurants. Les attended The University of Florida and University of Central Florida, and holds a Bachelor of Science degree in Business Administration and Finance.

Matt Cosson
Vice President, Distribution & Logistics

Matt Cosson began serving the Arby’s brand through ARCOP in 2006. Matt oversees the Distribution team, which includes inbound freight, logistics, kitchen equipment distributors (KES) and smallwares. He is an active member of the Council of Supply Chain Management Professionals and the Restaurant Facility Management Association. He earned a Bachelor of Science degree in Business Administration & Finance from The University of Nebraska, as well as an MA in Food Technology from The University of Georgia.
